In all the years I've been involved with this site, I have never seen one if you go by the true definition of a "rat rod."

The term was and is used to describe a junker made to look like the old rods of the 40's, 50's and some of the early 60's. Most of the members here actually try to restore these old trucks and or improve them but try to keep them looking as stock as possible. If you're really interested in doing one, google "rat rod sites" you may find some in those places.

Here's a post from this site of some years back. I wouldn't necessarily call the trucks rat rods since they don't meet the description above but it's close.
