I won't chime in on selection, you can read for a month and still not know much. Like already mentioned, you can call the manufacturers and get recommendations straight from them. (you can get an idea just browsing catalogs and checking rpm range recommended...)

MikeB also brings up a good point in making sure your other systems are up to the task and functioning properly.
Your 40 yr old valvesprings should be changed out also, again the cam manufacturer can make a recommendation based on the cam.

Educate yourself on break-in procedure! Unless you want to pony up the $$ for a retrofit roller...
