To each there own i suppose...those bumpers make me chuckle but as you said you have different terrain out there and do mostly mud runnin...
I'm used to Az....where i'm from...currently residing in grand junction colorado....90 miles from moab...and even my warn beat to hell classic bumper is a bit much.
On the FI....a 400 isn't that much larger than a 350 when you get down to it...and my chalet used to have a 400 with tbi also...ran great...the secret is not in the chip for the 7747 ecm...but knowing where to adjust the timing to and giving her more fuel psi to handle it....Howell will tell you 12 to 14 degree's advanced....drove from phx to vegas on 8 degree's....long trip and gutless....12 degree's made the difference....and adjusting the factory regulator up about three turns cured the lean issue....
On my swaps ( both K5's have been done by me) are preety easy as gm ran FI in the 87 to 91 K5's....i run the entire factory fuel set up....tank to tbi...and mod the harness to work for my application.
Best upgrade i ever made....especially when trying to run at 12K feet....
