I'd say it is your choice, as either, properly tuned, should work well with your engine. Congrats for realizing you do NOT need a 750. A 600-650(or 670)is plenty on your engine. Note: all this is just my 2 cents.

BTW: Both those carbs, although pricey, are beautiful.
