Assuming the replacement radiator is identical to your current one, best bet is to take the existing hoses with you to make sure the ends on the new ones match up. In case a PO has installed parts from a different year/model of vehicle. Don't see a down side to getting the AC hose unless you have NO plans to add AC back. Might as well replace those heater hoses while you are at it.
No recommendations on brands. I usually try to avoid the cheapest thing on the list as there is often a 'name brand' that costs a few cents more.
How old is your water pump? Much easier to replace now while the radiator is out of the way.
