If you're willing to do the fabrication, wiring, etc., then you can modify the original. Otherwise, going with a modern version from Dakota Digital, and others would be my vote.
Back when I modified mine, there wasn't much in the way of options. Here is what I did with my instrument cluster, using left over gauges, scrap Lexan for a lens, sheet aluminum, and tasking my friend who runs a vinyl lettering and sign business to cut out the numbers and hash marks for me in reverse.
