Didn't see anything in your post about the rear differential. Be sure it's up to the trip. I replaced the motor, trans, brakes, tires and wheels, plus a few more things on my 70 C10. I got into a little run with some guy on a motorcycle on a backroad for a couple miles. I was pushing my old truck pretty hard and it did good but latter I could hear a whine from the rear.
I already had a rear but wasn't planning to change it until next summer. Now I may have to move that up a little.
Other than this I would say make a couple good runs with the truck and if everything holds up, go for it.
