My old 68 would run at 205 with a .030 over 454 in Dallas summertime, a/c on, in traffic or idling or whatever. I think I was running a 195 thermostat. I datalogged my EFI just to watch the temp, it was pretty steady. I was running a Lincoln MK8 fan with a PWM controller. The fan was almost always running at 50% or more once the truck got warmed up.
I recalibrated my stock gauge, it would always be on the edge or in the red. A different resistor on the back got the needle where I liked it. I don't remember what resistance did the trick, that's been a while ago.

Big blocks do run hotter than small blocks, for sure.
