Personally, I'd drop the trans (4 bolts from the trans to the bellhousing), then I'd pull the motor and bellhousing. You'll have it pretty easy since you removed the hood. I've always left the hood on. I've pulled and replaced a 230, 5.3, and a 350. I usually leave the bellhousing bolted to the crossmember and just unbolt the trans then the motor from the bell, but I've seen a lot of people take it all out in one piece.
