Edelbrocks are great trouble free carbs once set up right. As Geezer said, they flood with high fuel pressure and percolate fuel without a heat insulating gasket. So you'll need a heat insulating gasket and either a fuel pressure regulator set to 5.5 psi or a fuel pump that puts out 5 or 6 psi.

I've never used a quick fuel, but I'm told they're a Holley clone. You can't go wrong with a Holley either.
I think summit carbs are also holly clones
