i use those bolt on adapters a lot. no problems. I like to use ET (extended thread) lug nuts on the adapter to hub side, for extra threads on the stock studs.
remember you are adding 1.25" thickness, so you are taking away backspace. a wheel with 5" backspace will only have 3.75" backspace if you use those.
looks like you got the right spacer to go 5x5 to 5x4.75
