Plug wire insulator or not

Is it better to have the spark plug wires near but NOT touching the headers

or

Wrestle those insulator boots on to the wires that then DO touch the headers?

I currently have bare metal headers that I am gonna remove and have ceramic coated after the break-in period if this new motor.

Thanks for any opinions.
