Need some measurement help

I just bought a set of 20x8.5 and 20x10 boss 338 wheels. As my truck sits right now its on jack stands. Is there an easy way to determine the size tires I want/need?
I would like to run 255/40 and 295/40 however I see some folks running the same setup 4/6 ECE drop kit and they can run a 245 and a 275 in the rear.

Is there a good way for me to determine what I can run?

You can tuck just about any size rim and tire, The height is not the issue you need to figure out its your back spacing to see if you will clear the fender wells.
