Coolant tempature
I recently had 6.0 changed in 2207 Avalanche due to spun cam bearing. With old engine temp at gauge was always a rock steady 210. With the rebuilt engine when idling at stop light it slowly creeps past 210. Would this be because displacement on demand is disabled on truck. The vlom was changed and so were the lifters to delete engine. I know this is not a major difference in temp but I am worried in the hot summer months truck will just get hotter. What temp is worrisome for a 6.0 engine 260 or 240?

Should be a 195 deg stat. Does the motor have the same sending unit the last motor had? Did you use any tape to install the thermostat?

On a 2207 model, it could be the warp drive...
Seriously, though. No AFM on my 4.8. Not the issue. As stated, perhaps a thermostat issue. One other item to check is whether the fans are turning on properly as well. These models use a multispeed fan setup. Two last things to consider are water pump and coolant. Proper coolant mix? Correct water pump flow? Good luck! I know that these types of issues can be frustrating.
