68 C50 thermostat

I replaced the stock c50 radiator with a new F350 radiator (Chevy purists everywhere are screaming, I know)

I ran it for about 2 hours and it seemed fine, my problem is the temp gauge has never been hooked up. I don't know if it has a thermostat or not.

Question 1 where did these models run the thermostat? (Block, Hose, Radiator?)

Question 2 Also, with the F350 radiator modification, what type of setup would ya'll recommend?

I'd run what ever thermostat that the factory recommended. Just make sure it is a high quality one. This is one place saving a couple of bucks isn't a good idea.

I think the sending unit is/was in the left head same as the pickups but I haven't worked on one of the bigger trucks in 25 years. I would rather have a good mechanical gauge than the electrical one on that truck.

if it has a chevy inline or gas V8 engine, then it is in the thermostat housing at the end of the upper rad hose (engine end) and looks something like this;

As far as your ford rad goes, it doesn't matter as long as it is secure, and is up to the task of cooling your engine.
I would recomend an aftermarket engine temp guage though, even if your stock one worked, it would still be a good idea if you work this truck.

Thermostat was in there. Seems to be working. However my Temp guage isn't working. I believe originally the wiring ran to the rad cap. Can anyone confirm this?

Due to the modification of the F350 rad, can anyone suggest how to use the temp guage? I'd like to know what the engine temp is when fully warmed and under a load. (as well as it's just nice to always know)

there shouldn't be anything wired to the cap.
While I have never worked on the old C/40 or bigger trucks, i would thing the coolant sensor would be in the head like on smaller cars/trucks of the day
