ive got new rings in my engine, so i know the oil on the plugs isnt coming from the bottem end.... i didnt change the valve seals like i should have though, so how hard would it be to change em without pulling the head?

not that hard. apply air to cylinder you want to change seals on(thru spark plug hole)this will keep valve from falling. then use a (on head)valve spring compresser to remove spring, install your new seals and reinstall springs/retainers. Hardest part is leaning over fenders.

or if you don't have an air compressor you can stick some rope in the sparkplug hole, then bring the piston up to TDC. [or as far as it will go without forcing it] Gotta know your shade tree tricks.

If you decide to replace those stock seals you can also install the "umbrella" type at the same time.
