Looks decent. I would start by putting an air cleaner that has a filter on it, not just a lid.
Change all the fluids, coolant flush included. Your passenger door is missing door handles... It looks to be in primer. If so, dont let it stay in primer for long. Primer absorbs water like a sponge. If you dont want rust get something on it, even a rattle can just to keep the metal safe. I see someone had fun doing the wiring on that truck. Id probably go over it to find any gremlins (there will be a lot from what I see) and make sure you dont have a fire. Looks fast and solid, cant wait to see it done

Average around 40 psi oil running. If it dips down into the 20 range and you have a low idle, that is fine. If you have low idle speed set and you have less then 20, you should probably raise that speed so you do not burn up the engine. My 400 small block used to do almost 60 at highway speeds, that is fine. It had a new oil pump too.

Its a little rough around the edges but worth fixing up.First thing i would do is fix that wiring mess it has.I understand adding gauges but they was sloppy with the wiring.

Re: My new project 83 swb gmc sierra
Yeah this thing is going to need alot of tlc with the wiring the po did a hack job, I have a friend that is going to help me rewire everything. The door are going to be the next major project. I am going to eliminate the gauges once i get the rewiring started. As you can tell from the above pictures that i have an extra set of doors and another firend that is going to help me with a bed and tailgate. You like the tailgate coryd?
