Starting from Ground up

My son and I have taken on a major task of resurrecting a 1971 LWB C-10. It originally had a 307, but my son found a C-10 parts truck with a workable 350 he plans to rebuild. The truck has been disassembled down to the frame, and we are early in the rebuild. We want to build a cruiser, one which rides smooth, strong, and efficient (I know, I'm asking for the world...). If we rebuild the 350, add a 5 speed auto transmission, what rear end would you recommend for our project. Keep in mind, I am not the mechanical one, the 16 year old boy is. Thanks in advance for all the help; I'm going to need it.
