Red face CARB How To/What size needed?

First Question:
What size carb is needed for a stock 68 327 running Hei and headers.
Secong Question:
How do I adjust a carb?

Symtems

I have a mystery moter thats a 327 in my 68 stepside. She has exhaust, Performer intake and edelbrock carb. I think she's running a lil rich. I've noticed a lil hesittion I'm thinking a lil to much carb. It's been a looooong time since I've had to tweek a carb. Any tips can be very appreciated.
