What is the best location for my Elect Fan T-stat sensor ?

Neither. I vote in the head or intake. This is the only place you will get a true reading of coolant temp in the engine.

I agree with Mike.
Since I'm currently doing the installation without the new engine, I'm installing an adjustable relay thermostat right at the inlet of the radiator. Eventually I will remove this relay and go for a intake thermostat controlled switch.

Yeah I need to do this also. Right now all I have is an on/off toggle switch.

Mine came with the Painless Fan wiring kit PRF-30103 (185 deg. on/170 degrees off) which Summit sells for $59.95 or you can buy the thermostat alone for $32.95, part number PRF 30130 for 185 degrees on, 170 degrees off or PRF 30110 for 200 degrees on or 185 off.

You can also buy them at your local parts stores to. Just ask for an electric fan thermostat control relay.

I installed mine at the inlet returning from the heater core. This was because the temp. relay the wiring kit I have mounts it in the fins of the radiator.

I bought one of those cheap 20 dollar thermostat kits which is adjustable but I don't like the sensor just mounted to the outside of the radiator. If like in the morning when its cool and my fan never cuts on cause I usually get on the highway to go to school and it won't cut on till I get off, but once I get off and slow down it will stay on forever, even if I get back on the highway it won't cut off, which I know there is enough air flowing through there to cool it. I want a kit that can just splice into the temp sensor on my heads or something.
