Your properly functioning radiator cap gives you about a 45 degree higher boiling point (Boyle's Law, I believe). Once you exceed that the water in your radiator flashes to steam expanding around 1700 times. I grew up in the mountains in the 60's and 70's and can tell you that "boiling over" was an everyday occurrence. Cars and trucks beside the road emitting huge clouds of coolant were common, even on new vehicles.

I'd imagine the altitude would/could/does effect engine performance, pressures etc. liquids. Good comment imjeff

My 66 Chevelle at 7000' never gave me a problem back in the day. But I did pass other newer cars parked beside the road. Keeping proper coolant and a good water pump was always the ticket.
