Thermostat procedure help

Finallyy got a universal fan shroud for my Aluminum Radiator, and wtf.... I'm thinking that I may of done something wrong, or.... Usually in the morning my truck runs at around 165ish-175... When i was driving to work today, it was running at 180 and at idle it went up to 195, and I have a 180 TStat.im so frustrated. I'm not sure what to do, I'm not sure if I ruined my radiator by pushing those threaded plastic ties threw the cooling fins, because some of them got damaged, but I'm sure thAts the only way they are supposed to be installed, pleased help!
I hope some of you guys that were helping on here before can help me...

It already seems like its running cooler....idled at 195 vs over 200 from last time....so I'm not seeing the issue. Let it idle during one of your 100+ days and see what happens.

If you have a 180 t-stat, it should warm up to at least that before the Tstat opens. So your days off running at 165 are probably over. Now, it may dip down to that once the Tstat opens, but then it will come back up.

Nothing seems off with your temps so far. You don't want an engine too cool. Nothing wrong with it getting up to 195-205 range. Ultimately an engine is going to heat to what it heats to, despite the thermostat. A lower thermostat won't ultimately make an engine run cooler, it will just open the coolant passages sooner. After that, it's up to the fan, radiator, and water pump to do it's thing.
