The good sauerkraut is made with the lactic acid method rather than saline. I have my mother's sauerkraut crock.

No kidding. Thanks, I’ll look into that. I was jazzing up some of Milwaukee’s best kraut per Oma’s directions including a smoked ham hock.

Crock-brewed is the best. I have no place to put the crock to ferment the cabbage, sad to say.

I visited Minneapolis yesterday and stopped for a meal at a generations-old Eastern European deli while there. Their sauerkraut was excellent and generously piled atop a traditional bratwurst and a bun, both of which they also made. Their home made pierogi were tasty too but German potato salad wasn’t as good as Oma makes.
I’ve seen several antique, wood cabbage shredders for sale at various yard sales that operate like a planer to shave off strips. I might get the next decent one I see. I like German red cabbage and could use a shredder for this and maybe to try a sauerkraut batch. https://www.kramarczuks.com/about/
