electric fan sending unit

i am installing a pair of electric fans on my 68, 305-v-8, performer rpm intake. i dont know what size thermostat to use or what to do about sending unit for fans. what size, or rating? location to install? please help. i want the fans to work only when needed not full time. this is a pair of fans out of a late model gm, 97 iroc? ls1? not sure. since i dont know the specs i think i should set them up on seperate 30 amp relays? thanks, pkj
