Insurance for Non-Operating Project Trucks??

I was thinking the other day....that I'm getting a whole lot of money tied up in my build and I probably should have the thing insured...Now, like a lot of project-builds it's not street worthy and won't be for quite some time....

So, I guess I'm wondering if anyone has been able to insure their "Work in Progress" non-driving project truck? Would Haggerty or Grundy even insure something that is not being driven and or is not even registered?.....

Any insight would be appreciated!
