Should I?

I traded an F150 for a 1972 GMC custom 1500, 84,xxx miles, 250 inline six, 4 speed, no ps/pb. I've alway liked this body style of truck but the long bed step side is a bit odd looking. I got this truck because the only rust to be found was in the driver side rocker and I figured it would be a good hotrod project. As I was cleaning the truck out I found the original protecto plate and sales paper work in a folder under the seat. Should I go ahead and build it how I want or restore it original and keep a well preserved piece of history?
