fuel pump problem?

i have an 84 c10 stepside, and sometimes when i press the gas a little too hard the engine bogs out a little then cuts back on and accelerates, could this be a symptom of a bad fuel pump? the problem is extremely random its only happened about twice since ive driven it, so at first i thought it couldve been low gas, or sediment in the tank, has anyone had this problem or have any opinions? im gonna try and drop the tank and clean it out if its not to much of a pain in the a@$, but otherwise, if you do think its the fuel pump, is that an easy install? im not thinking its the carb because everythings new, and it idles like perfectly and gives gas in park perfectly, it only happens in gear, ha like could this be something im making a big deal out of and maybe it was just low on gas or bad gas? any opinions or help are appreciated.
thanks. and to throw this in there, i see that the fuel pump is pushing plenty of fluid through the fuel filter, so now after editing this im thinking its not the fuel pump as much anymore.. haha idk any thoughts? maybe old stale gas at the bottom of the tank since it only had one or two gallons of gas in it total or something?
