Question for the "Stroker" guys

I'm getting ready to rebuild my Dana 60 and I'm not sure what ratio to use. I'll mainly be driving around the Phoenix area (it will see plenty of freeway time) and ofcourse some road trips to shows and stuff. I'm running a 383 stroker that should run around 425 horse, 425 ft/lbs with a 700R4. Is 3.73 to low? I see a lot of you guys run 3.08. Do you still have pretty good low end?
