Temperature Sensor

I put a new temperature sensore on my truck this weekend. The connector on the old one had worn out so I thought a new one would be in order. I put the new one in, put a new connector on the wire and hooked everything up. Now my temperature guage is very erratic. It will show extremely not long after the truck cranks up (in 30F weather) and will still show a reading after the truck has been turned off (I thought they only registered when the truck in on).

What could I have done? Did I possibly get a bad sensor or something. Everything worked beforehand, I just couldn't keep the wire attached to the sensor

Edit.. Sorry. 70 Chevy C-10. Crate Small block 350 with less than 10 miles on it. LOL
