Replacing steering wheel 67 C10.

I have a 67 c10 short bed 2 wheel drive, thinking of replacing the original large steering wheel with a smaller replacement wheel. Maybe even a quick release hub, this way I can remove the wheel make a bit harder to be stolen I would think.

Thinking of a Grant Classic 15' with a Chevy horn button. Got to admit, I don't know much about steering wheels.

Anyone replaced their wheel? Any advice? Is this as easy as I am thinking?
