Post Proper Water Temp For 350?

I thought my temp might be a bit high so I bought and installed an aftermarket gauge.
I have a 180 thermostat in it now. I went to the part store and the recommended one is 195. Is that correct? Anyway just driving around today its about 80 to 85 deg outside and the gauge reads 185. Turn on the A/C and run it about 70 mph slightly uphill for about 5 miles and it reads 200. Also I have a new 16lb cap.

sound ok?

What is the upper limit of normal?
Would 210 be ok?
