temp guage

I just intalled a new mech temp guage sender is on front of intake by thermostat. I have a few question at idle it stays right about 190 when driveing it will creep up to around 200 then drop right to 186 to 190 then stay at 190 for a while then creep again. My questions are it sounds like the thermostat is like a 190 is it normal for the guage to move so much? is it because it is mech are is it more the placement.
