Post how hot is hot?

ok, i have a 160 degree thermostat in my truck with a 350. just runinng around town and what not i run about 180-190, but when i am on the interstate, it will go all the way up to about 215 if i am not careful of my speed, unfortunately my speedometer is busted, so i dont know how fast is to fast, to the point where it is getting hot, so my question is, how hot should it go? i know the water pump works, the radiator could probalbly be replaced, since it is old and like ony a one core or something like that thanks
