Help!

Ok, I recently bought a 1962 Chevy c10 stepside. It was a full restoration a guy started and didn't have the money to complete. The cab was acid dipped and restored, all fenders are clean, disc brakes from 86 silverado, power steering geerbox from 89, and a 350 tbi and 700r4 from the same 89 truck. I also bought a parts truck with an inline 6 and 3 speed manual transmission. What I wanted was a truck with as little computer parts as possible. I'm a computer nerd by trade and would prefer my truck not to be computerized. Originally I wanted the I6 engine with an automatic transmission. This will be an every day driver so I am concerned about fuel economy. The most I would be pulling is 18' boat one day. So should use the I6 and the 700r4, the 350 and 700r4 or I6 and another transmission?
