1971 3/4 ton longhorn V-8/350

i just inherited my dads truck and want to find out about it. It's almost pristine shape, 64K original miles, kept in a garage its whole life, driven gently, probably not above 55 MPH for the last 10 years. I am driving it from idaho to new mexico in 2 weeks and would like advice as to how to run the engine to I don't hurt it. I need to "break it in" yes? Not 75 MPH on the freeway immediately out of the garage. Take oil, check it often etc. I'm getting all fluids changed, brakes checked, lights, etc. But how to drive it is the question now.

Any help will be greatly appreciated. Thank you.

It doesn't seem that many 1971 longhorn fleetside 3/4 ton are out there.
