What size tires should I put on my Foose?

Yo! Y'all!
So now that I've gottem, what size tires do you guys think I should put on 'em? Remember this is Colorado, snow and rocks are the main environment, and the truck would be doing duty in bad weather on the highway.

The wheels are 17" x 8.5", so the rubber would have to be fairly wide, but the environment would dictate moderate width. And I need height to reduce engine rpm at highway speed and protect those rims! Please post your thoughts, and THANKS!
