temp gauge question

i just picked up a 70 custom 10, anyway i had to take the intake manifold off to do soem work, after putting it all back together i started the car and noticed my temp gauge was bouncing very fast back and forth from cold to hot, i looked at the green wire inder the hood and it was striped in spots so i replaced a couple feet of wire, anyway not the gauge wont move off cold, is there any test i can do like grounding the wire or anything to find out where the problem may be?
