What size Carb is too big?

I have a 63 chevy truck with 71 camaro 350 camaro engine on it. Im putting a scoop on through the hood, so I was trying to put something shiny and cool. I've seen 700cmf 650, and 600. There is a super cool 750 cmf that has enduro shine. is that too big? The guy selling it said it made his truck too sluggish, like it was flooding or something like that.

Well my question really is what is the biggest carb I can put on my truck with the engine 350 I got out of a 71 camaro?
