Antiseize for stainless bed bolts ????

Need to trial fit the bed wood, strips and braces to mark holes etc before appling finish etc to the wood. I have all stainless bolts and nuts, if I use those they tend to lock themselves tight perhaps before I get a chance to disassemble for wood finishing.

Should I put some geniune anti-seize on the bolts and nuts, or would a light coat of oil keep them from sticking for a few days maybe even a week or two ? Thanks.
