97' Vortec in my 68?

I have an opportunity to pick up a 97' Tahoe for a good price. I'm needing a motor for my 68' and figured I could buy the truck just for the motor. I like the fact that it will have all the accessories, brackets, ect. I'm just not sure what I would need to do to make this a regular carburated motor in my 68'. I don't want all the electronics of course. Can I just swap out the intake and throw a 750 on it?
