Engine Temp for 350

Just got the new engine on the road. Running very well. I want to break this in right, but I'm maybe a bit too concerned about the temp. readings. I am hoping that 190-205 degrees is about right for a 350? I've got stock rebuilt heads on a new crate with a edelbrock 4 barrel, and a 700 R4 behind it. Also have 4 core radiator.

Any suggestions would help, it is in the 30's here temperature wise and not sure how it will do in the summer. I do know that these things can get hot, just not sure how hot.
