ready to ditch my Qjet, Which Holley is ideal?

Well as the title says I am just one of those people that think the quadrajunk is too overly complicated and is just not suited for my particular vehicle. First let me tell you whats on my 70' burb right now. It is a qjet off of an 83' C10. I have looked it over again and again and I just don't have the patience for it. I have finally put my foot down and I am switching to a holley carb. Right now I'm eye balling a 670 street avenger elec. choke but the engine in my burb' is a pretty tame 350 with a 700-R4 overdrive. Would a 570 be better for my burb'. I would also like to get the best fuel economy out of this truck while cruising and part throttle driving. and one more thing to consider is that I have to drive up and down a hill to get from town to my house which is an elevation change of 2,500 ft so tuneability is a big factor here. Basically what it boils down to is 1 Fuel economy 2 low end torque 3 tuneablilty 4 less headaches (actually that should be first)
