Oil change question. (capacity)

In the middle of changing my oil. I have a 283 casting # says it 1957-66.
What is the oil capacity. I would have thought 5 quarts including filter. So far I've put in 5 quarts plus a bottle of Bars leak and it's barely touching the dipstick (probably 2 quarts low). I'm starting to question the Mr Gasket oil dipstick that the PO put on it. Maybe that's why the engine leaks oil (overfilled). The oil pan doesn't look like an extra capacity unit. It has the drain plug on the front of bottom of the pan.

I'm not sure what to do at this point.
