will it work or am i crazy?

i have an '09 pontiac 6.0 L76 with trans. 6L80 that i want to try and put in a 70 stepside. i'm trying to convert it back to a streetable truck. it has a tilt front end with mustang II front end. i already know that this trans. is huge (size) and i want a bench seat instead of buckets. the truck is also tubbed.
i'm going for a pro touring look. i don't really want a boring 350. i want something with power and is good on gas. that is why i chose this motor. i may have bit off more than i can chew.
my questions are: can it be done w/o costing a fortune? should i scrap it now and start over? if so, what power plant will work?
any input will be greatly appreciated.

thnx,
Bird
