Engine Dilemma

I am facing a dilemma, but it isn't a really bad thing. I could be faced with worse decisions, but here it is. I can't decide what to engine to use. I have three to choose from.
1) Current engine combination I have in the truck-355 w/Vortec heads, Performer intake, HEI, Comp Cams XE250H-10 w/.444 lift, 600 CFM carb, Hooker Super Comp long tube headers and a 700R.
2)ZZ4 w/1.5 GM roller rockers and GM alum dual plane intake and roller lifters. This came out of a friends airboat.
3) My latest find,a 99 Vortec 350 that was built in 2002. It was balanced, has Magnum roller rockers, roller lifters, Comp Cam XR258HR-12 and fresh Vortec heads. This engine was never used after it was built, just placed in a bag and stored until I was able to buy it earlier this week.
My wife and I built engine number 1 which has close to 100,000 miles on it but still runs ok, doesn't smoke or use oil. It just a little down on power in my opinion for my intended future use.I want it to cruise in, not be my daily driver as it was in the past. The ZZ4 I am sure would have plenty of performance and meet my wish list. One of the concerns with engine 3 is the cam which is designed for FI use according to mfg specs.I wonder how it would work w/a carb? However when I bought this engine I also got the FI setup, factory harness and ECU that was in the 99 Denali. The fuel injection is spread out in about 3 boxes but it should all be there....
I think what all of this rambling amounts to is I need some fresh outside ideas and perspective, so please jump in anytime with your thoughts. Thanks
