Question Best Bang for buck Electric Fuel pump? Blazer falls on its face?

Ok I have a problem with my Blazer if I mash the throttle it'll fall on it's face, I've taken it to a shop and they can figure it out. I have alot of fuel line in it(custom fuel cooler) I'm thinking my fuel pump can't keep up? I have a electric Carter back by the tank. I have a brand new edelbrock 750, and the new Trick Flow aluminum heads, torker II intake. I had a cheap inline fuel pressure gauge on it and only like 3.5 pounds????
