on your sbw truck I would cut under the seam ,a 1/2 inch or so with a cut off wheel, then you can get in to drill the spots, or just use some pliers and wiggle the piece off.

on your bbw donor cab, the opposite, cut above the seam.

your only other option is to remove the roof skin to get at the spot welds in that area.
