Well, ok, so I don't have the truck back yet, but I just dropped it off at the local performance exhaust shop (Exhaustman in Azusa, CA).

I ordered 2-1/4" aluminized pipe w/ crossover, dual Magnaflows, exiting behind the rear tires at 45 or 60 degree angle.

I should be picking it up later today at 5 or 6 pm. I'll post back here to let everyone know how it went. Hopefully I'll able to record some sound files and/or videos of it and post those here as well. The thing I'm most happy about is that I finally got off my butt and am making some progress!
