Need some help...

I am new, but you guys have been great. My dilemma is this: I have a 350 crated chevy motor...about 9 years old...in great condition. The guy I bought it from rather rigged all the wiring. The original harness is there, but on the inside he put a three guage cluster with water, heat etc. He also put a kill switch under the fender. THERE ARE WIRES GOING EVERYWHERE!

I am tearing down the engine to paint, but not taking it out of car. How hard is it to rewire this thing with this kind of engine in it? I would rather rewire and make it look nice and know it is done right.
