Tire & Wheel Size for '68 C30

Does anyone have any suggestions for a tire and wheel size for a '68 C30. I know the factory wheels are 16 x 7.5. I'd like to put as much tire in there as possible. I'll be using 10 ply E load rating tires because I plan on using the truck, well as a truck and will be both hauling heavy loads and towing heavy trailers. I'd like to have as much rubber contacting the pavement without going over board.

I'll probably stick with 16" diameter wheels, I know I could got with 8" to 8.5" width, would a 10" width be too much? How much of an offset if any should I be looking for.
